Almond Orange Smoothie

- 1/2 c. dried,
unsulphured apricots,
plus soak liquid as needed
-
1-2 T. fresh coconut flakes
-
1/4 c. fresh, raw almonds
-
1-2 T. rice
syrup
-
1-1/3 c. orange juice
- adjust pinch nutmeg (opt.)
- 2 ice cubes (opt.)
Method
- Re-hydrate apricots.
*see note below*
- Grind coconut flakes into a fine meal,
using an electric seed grinder.
- Grind almonds in the same fashion.

Pour juice into blender and add apricots, nuts, coconut, rice syrup
and spice.
- Blend until smooth and creamy.
- Add ice, frozen bananas, if
desired and re-blend.
Serves 2
* Re-hydrate fruit as follows:
- Fill a pint-sized jar with about
one cup of dried fruit (or whatever is specified by recipe).
- Fill the
jar with water or juice.
- Let sit overnight.
Or:
-
Cover dried fruit with
near-boiling water in a mixing bowl and increase the amount an inch or
two.

Wait 15 minutes for fruit to soften.
